The weather is finally starting to brighten up a bit. I find at this time of year I start to crave salads more and more. Below is a lite potato salad recipe with great versatility. You can add any vegetables you have on hand or garbanzo beans to give it a little more flare.
You Will Need:
1/2 lb small red potatoes
1 cup of cherry tomatoes
1 cup of cooked green beans
1 small red onion
Lite feta cheese
Salt & Pepper
Scrub the potatoes and cut into quarters. Cover with salted water and boil until tender. Let cool.
Dice the cucumber.
Cut the cherry tomatoes in half.
Cut the green beans in half.
Mix all of the vegetables. Add the feta.
Whisk the olive oil, vinegar, salt and pepper and gently toss on the salad.
