I recently returned from a trip to Punta Cana. While on vacation I fell in love with the breakfast buffet. It was chock full of healthy options including tropical fruits and freshly cooked vegetables. Many of them I had never heard of before. Needless to say, I took advantage of this diversity and ate to my heart's content.
One of the things I really enjoyed were the freshly made juices and smoothies. I watched the girl make them each morning with just chopped fruit, vegetables, and ice. To die for! I realized I could do this at home and have been experimenting ever since. Here are some of the recipes I came up with:
Strawberry Banana Juice 1 cup seedless grapes 1 cup strawberries 1 banana 1 cup ice
Mint Smoothie 1 cup honeydew 1/2 cup lime flavored soda or mineral water 1/4 cup fresh mint 3 Tbs milk 1/8 tsp salt 3 Tbs lime juice 1 ripe kiwi, halved and flesh scooped out 2 cups chard, spinach or other green
Banana Milkshake 2 ripe bananas 1/2 cup milk 1 cup ice
Cucumber and Parsley Green Juice 1 cucumber 1 Tbs parsley 1 cup ice 1/4 cup water
Melon Juice 2 cups of melon (cantaloupe, watermelon, or honeydew) 1 cup ice
Note: you will need to chop up the produce into small pieces before adding it to the blender. Enjoy!!
